Ingredients

  • 3/4 cup Dried red beans
  • 3 cups Water
  • 1 tbsp Olive oil
  • 1/2 medium Yellow onion
  • 2 cloves Garlic
  • 1 tsp Chili powder
  • 1/2 tsp Ground cumin
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 3/4 cup Long-grain white rice
  • 1 pc Lime
  • 1/4 cup Fresh cilantro

Instructions

  1. 1

Rinse the red beans. In a pot, add beans and 3 cups water; bring to a boil, then reduce to a simmer and cook until tender, about 25 minutes.

  2. 2

While the beans cook, heat olive oil in a small pan over medium heat. Add diced onion and cook until soft, about 4 minutes. Add minced garlic and cook 30 seconds.

  3. 3

Stir chili powder, cumin, salt, and black pepper into the beans. Add the onion-garlic mixture and simmer 5 minutes more, mashing a few beans to make the sauce creamy.

  4. 4

Cook the rice according to package directions (about 10 minutes for 3/4 cup). Zest and juice the lime; chop the cilantro.

  5. 5

Fluff the rice and spoon beans over top. Finish with lime juice/zest and cilantro. Serve hot.
