Ingredients

  • 3/4 cup Dried red beans
  • 3 cups Water
  • 1 tbsp Olive oil
  • 1/2 medium Yellow onion
  • 2 cloves Garlic
  • 1 tsp Chili powder
  • 1/2 tsp Smoked paprika
  • 1/2 tsp Ground cumin
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/2 cup Long-grain white rice
  • 1 cup Water (for rice)
  • 1/4 cup Fresh cilantro
  • 1 medium Lime

Instructions

  1. 1

Rinse the red beans. Finely chop the onion and mince the garlic.

  2. 2

In a pot, heat olive oil over medium heat. Add onion and cook until softened, about 3 minutes, then stir in garlic, chili powder, smoked paprika, and cumin for 30 seconds.

  3. 3

Add rinsed beans and 3 cups water, then bring to a simmer. Cook until beans are tender, about 35 minutes, adding salt and black pepper near the end.

  4. 4

While beans cook, rinse the rice. In a small pot, combine rice and 1 cup water, bring to a boil, then cover and simmer until tender, about 12 minutes; fluff with a fork.

  5. 5

Stir lime juice into the rice, then spoon red beans over the rice. Top with chopped cilantro and serve.
