Ingredients

  • 8 ounces Imitation crab (surimi) sticks
  • 3 tablespoons Lime juice
  • 1/2 cup Tomato, diced
  • 1/2 cup Cucumber, peeled and diced
  • 1 teaspoon Jalapeño, seeded and minced
  • 2 tablespoons Red onion, finely chopped
  • 1 tablespoon Cilantro, chopped(optional)
  • 1/4 teaspoon Salt
  • 1 pinch Black pepper(optional)

Instructions

  1. 1

Thinly slice or chop the imitation crab sticks into bite‑size pieces and place them in a mixing bowl.

  2. 2

Add the diced tomato, cucumber, red onion, and minced jalapeño to the bowl.

  3. 3

Pour the lime juice over the mixture, sprinkle with salt and optional black pepper, then gently toss to coat evenly.

  4. 4

Let the ceviche sit at room temperature for 5‑7 minutes so the lime juice slightly “cooks” the seafood and flavors meld.

  5. 5

Stir in chopped cilantro (if using) just before serving and adjust seasoning with additional salt or lime juice as desired.
