Ingredients

  • 1 lb Ground turkey
  • 2 Eggs
  • 1 lb Spinach
  • 1 tbsp Olive oil
  • 4 cloves Garlic
  • 1/2 cup Onion
  • 1 tbsp Chipotle in adobo (chopped)
  • 1/2 cup Tomato sauce
  • 2 tbsp Lime juice
  • 1 tsp Ground cumin
  • 1/2 tsp Smoked paprika
  • 1/2 tsp Oregano
  • 1/2 tsp Salt(optional)
  • 1/2 tsp Black pepper

Instructions

  1. 1

Heat olive oil in a skillet over medium-high. Sauté onion and garlic until softened, 3–4 minutes.

  2. 2

Add ground turkey and cook until browned, breaking up clumps, 8–10 minutes.

  3. 3

Stir in chipotle, cumin, smoked paprika, oregano, salt (if using), and pepper; cook 30 seconds.

  4. 4

Add tomato sauce and simmer until thickened, 6–8 minutes. Stir in lime juice and turn off heat.

  5. 5

Spinach egg topping: in the same skillet (or a small pan), wilt spinach with a splash of water. Lower heat and add whisked eggs, stirring to form soft curds.

  6. 6

Spoon the spinach-egg topping over the chipotle turkey skillet and serve hot.
