Ingredients

  • 450 g Sirloin steak
  • 2 tsp Chipotle powder
  • 3 tbsp Lime juice
  • 2 tbsp Olive oil
  • 3 cloves Garlic
  • 1 tsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 700 g Zucchini
  • 1 small Red onion(optional)
  • 0.25 cup Cilantro(optional)
  • 2 tbsp Water(optional)

Instructions

  1. 1

Slice steak into thick portions. Pat dry.

  2. 2

Mix chipotle powder, lime juice, olive oil, minced garlic, cumin, salt, and black pepper into a paste. Rub over steak.

  3. 3

Preheat oven to 220°C / 425°F. Toss zucchini (and red onion if using) with a little olive oil, salt, and pepper; spread on a sheet pan.

  4. 4

Roast zucchini 12 minutes, then push to one side and add steak to the pan (or roast steak separately).

  5. 5

Roast steak 8–10 minutes for medium-rare (rest 5 minutes).

  6. 6

If you see browned bits, deglaze the pan with 2 tbsp water and scrape; spoon over steak.

  7. 7

Finish with cilantro and extra lime juice.
