Ingredients
- 2 pounds Chicken wings
- 2 tablespoons Chipotle peppers in adobo sauce
- 3 tablespoons Lime juice
- 1 tablespoon Olive oil
- 1 tablespoon Honey
- 1 teaspoon Garlic powder
- 1 teaspoon Cumin
- 2 tablespoons Fresh cilantro
- 1 teaspoon Salt
- ½ teaspoon Black pepper
Instructions
- 1
Preheat your smoker to 225°F (107°C) and add mesquite wood chips; let it stabilize for 10 minutes.
- 2
Pat the chicken wings dry, then toss them with olive oil, salt, black pepper, garlic powder, and cumin; arrange them on the smoker rack.
- 3
Smoke the wings for 60 minutes, turning once halfway through, until they reach an internal temperature of 150°F (65°C).
- 4
While the wings smoke, whisk together chipotle peppers, lime juice, honey, and a pinch of salt to form the glaze.
- 5
After smoking, increase the smoker temperature to 350°F (175°C) and brush the wings generously with the chipotle‑lime glaze.
- 6
Continue cooking for an additional 15‑20 minutes, basting once more halfway, until the glaze caramelizes and the wings reach 165°F (74°C).
- 7
Remove the wings, sprinkle chopped fresh cilantro on top, and let rest 5 minutes before serving.
