Mediterranean Pasta Salad

Cold rotini pasta tossed with olives, feta, cucumbers, and a bright oregano vinaigrette.

Ingredients

  • 8 oz Rotini or Penne pasta
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 0.5 cup Kalamata olives, sliced
  • 0.25 cup Red onion, finely diced
  • 0.5 cup Feta cheese, crumbled
  • 0.33 cup Extra virgin olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Dried oregano
  • 2 tbsp Fresh parsley, chopped(optional)

Instructions

    Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente.

    Drain the pasta and rinse under cold water to stop the cooking process and cool it down.

    In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to create the dressing.

    In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, olives, and red onion.

    Pour the dressing over the salad and toss well to coat all ingredients evenly.

    Gently fold in the crumbled feta cheese and fresh parsley.

    Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
