Mediterranean Halloumi Salad

A fresh salad featuring grilled halloumi cheese, cherry tomatoes, cucumbers, and a lemon-herb vinaigrette.

Ingredients

  • 250 g Halloumi cheese
  • 1 medium Cucumber
  • 200 g Cherry tomatoes
  • 0.25 cup Red onion
  • 0.25 cup Kalamata olives
  • 3 tbsp Extra virgin olive oil
  • 1 tbsp Lemon juice
  • 1 tsp Dried oregano
  • 2 tbsp Fresh parsley(optional)

Instructions

    Slice the halloumi into 1cm thick rectangles and pat dry with a paper towel.

    Chop the cucumber into half-moons, halve the cherry tomatoes, and thinly slice the red onion.

    In a large bowl, whisk together the olive oil, lemon juice, and dried oregano to create the dressing.

    Add the cucumber, tomatoes, onion, and olives to the bowl and toss gently to coat.

    Heat a non-stick frying pan over medium-high heat. Add the halloumi slices and cook for 1-2 minutes per side until golden brown and slightly softened.

    Top the salad with the warm halloumi and fresh parsley. Serve immediately.
