Ingredients

  • 1 lb beef chuck, cut into 1-inch cubes
  • 3 tbsp massaman curry paste
  • 1 can (13.5 oz) coconut milk
  • 2 medium potatoes, cubed
  • 1/4 cup roasted peanuts
  • 1 small onion, quartered
  • 1 tbsp fish sauce
  • 1 tbsp palm sugar or brown sugar
  • 1 cinnamon stick(optional)
  • 1 tbsp tamarind paste(optional)
  • 2 cups cooked jasmine rice, for serving

Instructions

  1. 1

Prep all ingredients: cube the beef, dice the potatoes, quarter the onion, and measure out the curry paste, peanuts, and seasonings (about 20 minutes).

  2. 2

In a heavy pot over medium heat, fry the massaman curry paste in 2 tablespoons of the thick coconut cream from the can for 2-3 minutes until fragrant.

  3. 3

Add the beef and toss to coat in the paste, searing for 3-4 minutes.

  4. 4

Pour in the remaining coconut milk and 1/2 cup water, add the cinnamon stick, and bring to a gentle simmer. Cover and cook for 40 minutes, stirring occasionally.

  5. 5

Add the potatoes, onion, peanuts, fish sauce, sugar, and tamarind paste. Simmer uncovered for another 15-20 minutes until the beef is tender and the potatoes are cooked through.

  6. 6

Taste and adjust seasoning with more fish sauce or sugar if needed. Remove the cinnamon stick and serve hot over jasmine rice.
