Ingredients

  • 300 g beef chuck, thinly sliced
  • 2 tbsp massaman curry paste
  • 400 ml coconut milk (unsweetened)
  • 250 g potatoes, small diced
  • 1 medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 40 g peanuts, roasted and chopped
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • 1 tbsp lime juice
  • 1 tbsp neutral oil
  • 120 ml water or beef broth(optional)

Instructions

  1. 1

Prep (15 minutes): Slice the beef, dice the potatoes, thinly slice the onion, and mince the garlic. Chop the peanuts.

  2. 2

Cook (30 minutes): Heat oil in a pot over medium-high heat. Sauté onion for 3–4 minutes, then add garlic and cook 30 seconds. Stir in massaman curry paste and cook 1 minute until fragrant.

  3. 3

Add beef and cook 5–6 minutes, stirring, until browned. Stir in coconut milk and water/broth (if using), then add potatoes. Bring to a simmer and cook 15–18 minutes, until potatoes are tender and beef is cooked through.

  4. 4

Finish: Stir in fish sauce and brown sugar. Simmer 1–2 minutes, then turn off heat and stir in lime juice. Top with chopped peanuts and serve hot.
