Ingredients

  • 1 lb Beef chuck, cut into 1-inch cubes
  • 3 tbsp Massaman curry paste
  • 1 can (13.5 oz) Coconut milk
  • 2 medium Yukon gold potatoes, cubed
  • 1/3 cup Roasted peanuts
  • 1 medium Onion, quartered
  • 1 tbsp Fish sauce
  • 1 tbsp Palm sugar or brown sugar
  • 1 tbsp Tamarind paste(optional)
  • 1 Cinnamon stick(optional)
  • 1 cup Jasmine rice, for serving

Instructions

  1. 1

Prep all ingredients: cube the beef and potatoes, quarter the onion, and measure out the paste, sauce, and sugar (about 20 minutes).

  2. 2

Heat 1 tbsp oil in a heavy pot over medium heat. Fry the massaman paste for 1-2 minutes until fragrant, then add the beef and toss to coat.

  3. 3

Pour in the coconut milk, add the cinnamon stick, and bring to a gentle simmer. Cover and cook for 25 minutes, stirring occasionally.

  4. 4

Add the potatoes, onion, peanuts, fish sauce, sugar, and tamarind paste. Simmer uncovered for another 20 minutes, until the beef is tender and the sauce has thickened.

  5. 5

Meanwhile, cook the jasmine rice according to package directions.

  6. 6

Taste and adjust seasoning with more fish sauce or sugar if needed. Serve the curry hot over jasmine rice.
