Ingredients

  • 300 g beef chuck, cut into 1-inch pieces
  • 300 g potatoes, peeled and cubed
  • 400 ml coconut milk (full-fat)
  • 2 tbsp massaman curry paste
  • 40 g peanuts, dry-roasted and chopped
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • 1 tbsp lime juice
  • 1 tbsp neutral oil
  • 120 ml water or beef broth

Instructions

  1. 1

Prep (15 minutes): Cube the potatoes and beef, slice the onion, mince the garlic, grate the ginger, and chop the peanuts.

  2. 2

In a pot over medium heat, add the oil and sauté onion for 3–4 minutes until softened. Stir in garlic and ginger for 30 seconds.

  3. 3

Add massaman curry paste and cook for 1 minute, stirring to toast it. Add beef and cook for 3–4 minutes, until coated and lightly browned.

  4. 4

Pour in coconut milk and water/broth, then add potatoes. Bring to a simmer and cook for 20–22 minutes, stirring occasionally, until beef is tender and potatoes are cooked through.

  5. 5

Stir in peanuts, fish sauce, and brown sugar. Simmer 2–3 minutes to meld flavors, then turn off heat and stir in lime juice. Serve hot.
