Ingredients

  • 4 eggs
  • 1 tbsp olive oil
  • 1/2 cup bell pepper
  • 1/2 cup zucchini
  • 1/4 cup onion
  • 1/2 cup spinach
  • 1 clove garlic
  • 1/4 cup grated Parmesan
  • 1/4 tsp salt(optional)
  • 1/8 tsp black pepper(optional)

Instructions

  1. 1

Heat oven to 400°F (205°C). Dice bell pepper, zucchini, and onion; mince garlic.

  2. 2

In an oven-safe skillet, warm olive oil over medium heat. Sauté onion, bell pepper, and zucchini for 6–8 minutes until slightly softened. Add garlic for 30 seconds, then stir in spinach until wilted.

  3. 3

In a bowl, whisk eggs with Parmesan, black pepper, and (if using) salt. Pour the egg mixture over the sautéed vegetables in the skillet.

  4. 4

Bake for 12–15 minutes, until the center is set and the top is lightly golden. Rest 2–3 minutes, then slice and serve.
