Ingredients
- 2 cups Cooked jasmine rice (cold preferred)
- 2 large Egg
- 2 cups Mixed vegetables (peas, carrots, corn, etc.)
- 3 tbsp Soy sauce (low-sodium if desired)
- 1 tsp Sesame oil(optional)
- 2 cloves Garlic(optional)
- 2 stalks Green onions(optional)
- 1 tbsp Neutral oil (for frying)
- 1/4 tsp Ground black pepper(optional)
Instructions
- 1
Prep (10 minutes): Dice or mince the garlic and green onions. If using fresh vegetables, chop them into bite-size pieces. Measure out the soy sauce and sesame oil.
- 2
Cook (15 minutes): Heat a large skillet or wok over medium-high heat and add the neutral oil. Add mixed vegetables and stir-fry until hot and lightly tender, about 6–8 minutes.
- 3
Push vegetables to the side. Crack eggs into the empty space and scramble until just set, about 1–2 minutes, then mix with the vegetables.
- 4
Add garlic (if using) and stir for 30 seconds. Add cold cooked rice and break up any clumps. Stir-fry until the rice is hot and slightly toasted, about 5–6 minutes.
- 5
Season: Drizzle in soy sauce and add black pepper (if using). Toss well to coat. Turn off heat and finish with sesame oil and green onions (if using). Serve immediately.
