Ingredients

  • 1 cup Bell peppers (mixed colors), sliced
  • 1/2 cup Yellow onion, sliced
  • 1 tbsp Olive oil
  • 1 tbsp Fajita seasoning (store-bought or homemade)
  • 4 medium Tortillas (flour)
  • 1/2 cup Shredded cheese (cheddar or Mexican blend)
  • 1/8 tsp Salt(optional)
  • 1/8 tsp Black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Slice the bell peppers and onion. Measure the fajita seasoning and shred the cheese if needed.

  2. 2

Cook (15 minutes): Heat olive oil in a skillet over medium-high heat. Add peppers and onion, season with fajita seasoning (and optional salt/pepper), and sauté until softened and lightly browned, about 10–12 minutes.

  3. 3

Assemble: Lay tortillas flat and sprinkle cheese over half of each tortilla. Spoon the sautéed veggie mixture over the cheese, then fold the tortillas in half.

  4. 4

Crisp: Wipe or lightly re-oil the skillet if needed, then cook the folded quesadillas over medium heat until golden and crisp on both sides, about 3–5 minutes total. Serve hot.
