- 10 oz mareco (or beef/steak strips)
- 1 lime
- 3 cups cabbage (green or purple), shredded
- 1/4 cup plain Greek yogurt
- 1 tbsp mayonnaise
- 6 tortillas (corn or flour)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp cilantro, chopped(optional)
- 1/4 cup red onion, thinly sliced(optional)
Instructions
- 1
Prep (15 min): Shred the cabbage and thinly slice the red onion (if using). In a bowl, mix Greek yogurt, mayonnaise, juice of 1/2 lime, salt, and pepper; toss with cabbage (and onion if using).
- 2
Season (5 min): Pat the mareco dry. In a bowl, combine garlic powder, cumin, chili powder, salt, and black pepper. Rub the spice mix over the mareco.

Sear (12 min): Heat olive oil in a skillet over medium-high heat. Sear mareco in a single layer, 3–4 minutes per side (work in batches if needed) until browned and cooked to your preferred doneness. Remove to a plate and rest 2 minutes, then slice.

Assemble (5 min): Warm tortillas in the same skillet for 30–60 seconds each. Fill tortillas with sliced mareco and top with lime slaw and cilantro (if using). Squeeze remaining lime over the top.
