Ingredients

  • 12 oz Shrimp, peeled and deveined
  • 1 tbsp Chili powder
  • 1 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • 1 tbsp Olive oil
  • 1 Lime
  • 3 cups Shredded cabbage
  • 1/4 cup Mayonnaise
  • 2 tbsp Plain Greek yogurt(optional)
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 6 Corn tortillas

Instructions

  1. 1

Prep (about 15 minutes total prep): Pat shrimp dry. In a bowl, mix chili powder, cumin, garlic powder, salt, and black pepper. Zest and juice the lime; set zest/juice aside. Shred cabbage if needed.

  2. 2

Cook (about 15 minutes): Heat olive oil in a skillet over medium-high heat. Toss shrimp with the spice mix, then sauté 2–3 minutes per side until pink and cooked through.

  3. 3

Make lime slaw while shrimp cooks: In a bowl, combine cabbage with mayonnaise (and Greek yogurt if using), lime juice, and a pinch of salt. Toss until evenly coated.

  4. 4

Assemble: Warm tortillas in the skillet or microwave. Fill tortillas with shrimp and top with crunchy lime slaw. Serve immediately.
