- 1 cup Glutinous sweet rice
- 1.5 cups Full-fat coconut milk
- 0.5 cup Granulated sugar
- 0.5 teaspoon Salt
- 2 large Ripe Ataulfo mangoes, diced
- 1 tablespoon Toasted mung beans or sesame seeds(optional)
- 1 teaspoon Cornstarch
- 1 cup Water
- 4 sprigs Fresh mint leaves(optional)

Soak the glutinous rice in water for at least 4 hours, or ideally overnight, then drain thoroughly.

Steam the rice in a cheesecloth-lined steamer basket over boiling water for 25-30 minutes until tender and translucent.

While rice steams, heat 1 cup of coconut milk, 1/4 cup sugar, and 1/4 teaspoon salt in a saucepan until dissolved; do not boil.

Transfer the hot steamed rice to a bowl and pour the coconut milk mixture over it; cover and let sit for 20 minutes to absorb.

Prepare the topping sauce by heating the remaining 0.5 cup coconut milk, remaining sugar, salt, and a cornstarch slurry until thickened.

Begin assembly by placing a layer of the coconut sticky rice at the bottom of four clear parfait glasses.
