Ingredients

  • 2 cups rolled oats
  • 1 can (13.5 oz) coconut milk
  • 2 large ripe bananas
  • 1.5 cups fresh or frozen blueberries
  • 1/3 cup maple syrup
  • 3 tablespoons ground flaxseed
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon avocado oil
  • 1/4 cup toasted pumpkin seeds(optional)

Instructions

  1. 1

Preheat the oven to 375°F (190°C) and brush an 8x8-inch baking dish with avocado oil.

  2. 2

Mash the bananas in a large bowl until mostly smooth.

  3. 3

Whisk in the coconut milk, water, maple syrup, vanilla extract, and ground flaxseed until fully combined.

  4. 4

Stir in the rolled oats, baking powder, cinnamon, and salt, then let the batter rest for 10 minutes so the oats begin to absorb the liquid.

  5. 5

Gently fold in 1 cup of the blueberries, reserving the rest for the top.

  6. 6

Spread the batter evenly into the prepared dish and scatter the remaining blueberries on top, pressing them in slightly.

  7. 7

Bake for 40-45 minutes, until the top is golden, the edges are set, and the center no longer jiggles.

  8. 8

Cool completely in the dish, then cover and refrigerate overnight. Reheat individual squares in the microwave or a 350°F oven, and top with toasted pumpkin seeds before serving.
