Ingredients

  • 1 lb ground turkey breakfast sausage
  • 2 cups diced sweet potato
  • 1 large, thinly sliced yellow onion
  • 1 diced red bell pepper
  • 1 cup full-fat coconut milk
  • 1/4 cup coconut flour
  • 2 tbsp avocado oil
  • 1 tbsp chopped fresh sage
  • 3 cloves minced garlic
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 2 tbsp nutritional yeast

Instructions

  1. 1

Preheat oven to 400F and grease a 9x9 baking dish with avocado oil.

  2. 2

Toss diced sweet potato with 1 tbsp avocado oil, salt, and black pepper; roast 25 minutes until edges crisp.

  3. 3

Meanwhile, brown the turkey sausage in a skillet over medium-high heat, breaking it up, 8 minutes; remove and set aside.

  4. 4

In the same skillet, cook onion in remaining avocado oil over medium-low heat 15 minutes until deeply caramelized, adding garlic and bell pepper in the last 3 minutes.

  5. 5

Whisk coconut milk with coconut flour, nutritional yeast, sage, salt, and pepper until smooth; let thicken 5 minutes into a pourable batter.

  6. 6

Layer roasted sweet potato, sausage, and onion mixture in the dish, pour the coconut batter evenly over the top, and bake 30 minutes until set and golden.

  7. 7

Cool completely, portion into 3 servings, and refrigerate; reheat 375F for 12 minutes before serving.
