Ingredients

  • 12 ounces Tortilla chips
  • 2 cups Cooked pulled pork
  • 0.5 cup BBQ sauce
  • 1.5 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 0.5 cup Black beans, rinsed and drained
  • 0.25 cup Pickled jalapeños
  • 0.25 cup Red onion, finely diced
  • 0.5 cup Sour cream(optional)
  • 2 tablespoons Fresh cilantro, chopped(optional)
  • 1 whole Roma tomato, diced

Instructions

    Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or foil.

    In a small bowl, toss the cooked pulled pork with the BBQ sauce until evenly coated.

    Spread half of the tortilla chips in an even layer on the prepared baking sheet.

    Top the first layer of chips with half of the pork, half of the black beans, and half of both cheeses.

    Add the remaining chips on top and repeat with the rest of the pork, beans, and cheese to ensure every chip is covered.

    Bake for 10 to 12 minutes, or until the cheese is bubbly and slightly golden.

    Remove from the oven and immediately top with diced tomatoes, red onions, and pickled jalapeños.

    Drizzle with sour cream and garnish with fresh cilantro before serving warm.
