Lentil and Walnut Veggie Burgers

Ingredients

  • 1.5 cups Cooked brown lentils
  • 0.5 cup Walnuts
  • 0.5 cup Breadcrumbs
  • 0.5 cup Onion, finely diced
  • 2 cloves Garlic, minced
  • 1 tablespoon Soy sauce
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Ground cumin
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh parsley(optional)

Instructions

    Toast the walnuts in a dry pan over medium heat for 3-5 minutes until fragrant, then finely chop or pulse in a food processor.

    In a large bowl, mash 1 cup of the cooked lentils with a fork or potato masher, leaving the remaining 0.5 cup whole for texture.

    Sauté the diced onion and garlic in 1 tablespoon of olive oil until soft and translucent.

    Add the mashed lentils, whole lentils, chopped walnuts, sautéed onions, breadcrumbs, soy sauce, paprika, and cumin to a bowl. Mix thoroughly.

    Form the mixture into 4 even patties, pressing firmly so they hold together.

    Heat the remaining olive oil in a non-stick skillet over medium heat.

    Cook the patties for 5-7 minutes per side until a golden-brown crust forms.
