Ingredients

  • 12 oz baby potatoes
  • 2 tbsp water(optional)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 fillets salmon fillets
  • 1.5 tbsp olive oil
  • 1 lemon
  • 0.5 tsp dried oregano
  • 0.25 tsp dried thyme
  • 0.25 tsp garlic powder(optional)
  • 2 tbsp chopped fresh parsley(optional)

Instructions

  1. 1

Microwave the potatoes: Place baby potatoes in a microwave-safe bowl with 2 tbsp water, cover, and microwave on high for 8–10 minutes, until tender. Carefully drain any excess water.

  2. 2

Season the salmon: Pat salmon dry. Rub with 1 tbsp olive oil, then season with salt, black pepper, oregano, thyme, and (if using) garlic powder. Zest the lemon over the salmon and squeeze about half the lemon juice on top.

  3. 3

Cook the salmon (15 minutes total cook time): Heat a nonstick skillet over medium-high. Add remaining 0.5 tbsp olive oil, place salmon in the pan skin-side down if applicable, and cook 4–6 minutes per side until it flakes easily and reaches doneness.

  4. 4

Finish and serve: Microwave potatoes for 30–60 seconds if needed to re-warm. Toss potatoes with remaining lemon juice and a pinch of salt/pepper. Top salmon with parsley (if using) and serve with potatoes.
