Lemon Herb Mediterranean Bowl

Ingredients

  • 1 cup Quinoa
  • 3 tbsp Lemon juice
  • 2 tbsp Olive oil
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 0.25 cup Kalamata olives(optional)
  • 0.25 cup Feta cheese
  • 2 tbsp Fresh parsley
  • 1 tsp Dried oregano
  • 1 can Chickpeas

Instructions

    Rinse the quinoa and cook in 2 cups of water until fluffy, about 15 minutes.

    While quinoa cooks, dice the cucumber, halve the cherry tomatoes, and chop the parsley.

    In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper to create the dressing.

    Drain and rinse the chickpeas.

    In large serving bowls, layer the cooked quinoa, chickpeas, cucumbers, and tomatoes.

    Top with olives, crumbled feta cheese, and fresh parsley.
