Ingredients

  • 1 cup Dry couscous
  • 1 cup Boiling water or vegetable broth
  • 3 tablespoons Lemon juice
  • 2 tablespoons Extra virgin olive oil
  • 0.5 cup Fresh parsley, chopped
  • 0.25 cup Fresh mint, chopped
  • 1 cup Cucumber, diced
  • 0.5 cup Cherry tomatoes, halved
  • to taste Salt and black pepper
  • 0.25 cup Feta cheese, crumbled(optional)

Instructions

    Place the dry couscous in a large heat-proof bowl.

    Pour the boiling water or broth over the couscous, cover the bowl with a lid or plastic wrap, and let it sit for 5 minutes.

    Remove the cover and fluff the couscous with a fork to separate the grains.

    In a small jar or bowl, whisk together the lemon juice, olive oil, salt, and pepper.

    Add the diced cucumber, cherry tomatoes, parsley, and mint to the fluffed couscous.

    Pour the dressing over the salad and toss gently to combine.

    Top with crumbled feta cheese if using, and serve at room temperature or chilled.
