- 1 cup Boiling water or vegetable broth
- 3 tablespoons Lemon juice
- 2 tablespoons Extra virgin olive oil
- 0.5 cup Fresh parsley, chopped
- 0.25 cup Fresh mint, chopped
- 1 cup Cucumber, diced
- 0.5 cup Cherry tomatoes, halved
- to taste Salt and black pepper
- 0.25 cup Feta cheese, crumbled(optional)

Pour the boiling water or broth over the couscous, cover the bowl with a lid or plastic wrap, and let it sit for 5 minutes.
