Ingredients

  • 30 oz Canned chickpeas
  • 1 large English cucumber
  • 1 cup Cherry tomatoes
  • 0.25 cup Red onion
  • 0.5 cup Fresh parsley
  • 3 tbsp Lemon juice
  • 2 tbsp Extra virgin olive oil
  • 1 tsp Dried oregano
  • 0.5 tsp Salt and black pepper
  • 0.25 cup Feta cheese(optional)

Instructions

    Drain and rinse the chickpeas thoroughly in a colander.

    Dice the cucumber, halve the cherry tomatoes, and finely mince the red onion.

    In a large mixing bowl, whisk together the lemon juice, olive oil, dried oregano, salt, and pepper.

    Add the chickpeas, cucumber, tomatoes, onion, and chopped parsley to the bowl.

    Toss all ingredients until evenly coated with the dressing.

    Gently fold in feta cheese if using.
