Ingredients
- 6 pieces Bone-in, skin-on chicken thighs
- 3 tablespoons Olive oil
- 2 tablespoons Fresh lemon juice
- 4 cloves Garlic cloves, minced
- 1 tablespoon Fresh rosemary, chopped
- 1 tablespoon Fresh thyme leaves
- 1 teaspoon Lemon zest
- 1 1/2 teaspoons Kosher salt
- 1/2 teaspoon Black pepper
- 1 whole Lemon, sliced into rounds(optional)

Preheat your oven to 425°F (220°C) and lightly grease a large baking dish or cast-iron skillet.

Pat the chicken thighs completely dry with paper towels to ensure the skin gets extra crispy.

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, rosemary, thyme, lemon zest, salt, and pepper.

Place the chicken in the baking dish and pour the herb mixture over them, rubbing it thoroughly under and over the skin.

Arrange the chicken skin-side up and tuck the optional lemon slices between the pieces for extra aroma.

Roast in the center of the oven for 30 to 35 minutes until the skin is golden brown and crispy.

Check that the internal temperature reaches 165°F (74°C) using a meat thermometer.

Remove from the oven and let the chicken rest for 5 minutes before serving to keep the juices inside.
