Ingredients

  • 1.5 lb Pork spareribs
  • 1/4 cup Fresh lime juice
  • 2 tbsp Chili powder
  • 3 Garlic cloves, minced
  • 2 tbsp Olive oil
  • 1/4 cup Fresh cilantro, chopped
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1

In a large bowl, whisk together lime juice, chili powder, minced garlic, olive oil, salt, and black pepper to form the marinade.

  2. 2

Add the pork spareribs to the bowl, toss to coat thoroughly, then cover and refrigerate for at least 30 minutes (or up to 2 hours) while you prep the oven.

  3. 3

Preheat the oven to 300°F (150°C). Arrange the marinated ribs on a roasting rack set over a baking sheet, reserving any remaining marinade.

  4. 4

Slow‑roast the ribs for 2 hours, then baste with the reserved marinade and continue roasting for an additional 45 minutes, or until the meat is tender and the surface is caramelized.

  5. 5

Remove the ribs from the oven, let rest for 5 minutes, then sprinkle with chopped cilantro before serving.
