Ingredients

  • 2 pieces Boneless chicken thighs
  • 1/2 cup Buttermilk
  • 1/2 cup All-purpose flour
  • 1/4 cup Cornstarch
  • 2 tbsp Gochujang
  • 2 tbsp Honey
  • 1 tbsp Soy sauce
  • 2 cloves Garlic, minced
  • 4 pieces Slider buns
  • 2 cups Vegetable oil
  • 8 slices Pickled cucumber slices(optional)
  • 1 tsp Sesame seeds(optional)

Instructions

  1. 1

Cut each chicken thigh into 2 pieces and soak in buttermilk for 10 minutes.

  2. 2

Mix flour, cornstarch, salt, and pepper in a shallow dish. Dredge the chicken pieces until well coated.

  3. 3

Heat vegetable oil to 350°F (175°C) in a heavy pot. Fry chicken in batches for 6-8 minutes until golden and cooked through, then drain on paper towels.

  4. 4

While chicken fries, combine gochujang, honey, soy sauce, garlic, and 1 tbsp water in a small saucepan. Simmer 3-4 minutes until sticky.

  5. 5

Toss the fried chicken in the sauce until evenly glazed.

  6. 6

Toast the slider buns cut-side down in a dry pan for 1-2 minutes.

  7. 7

Assemble sliders with pickles on the bottom bun, saucy chicken, and a sprinkle of sesame seeds. Serve immediately.
