  • 2 lbs Chicken wings, split at joints
  • 2 whole Scotch bonnet peppers, seeded and minced
  • 4 stalks Green onions, chopped
  • 1 tablespoon Fresh ginger, grated
  • 4 cloves Garlic cloves, minced
  • 1 tablespoon Ground allspice
  • 2 tablespoons Brown sugar
  • 1 teaspoon Dried thyme
  • 0.25 cup Soy sauce
  • 2 tablespoons Lime juice
  • 2 tablespoons Vegetable oil

Instructions

    In a food processor, combine the peppers, green onions, ginger, garlic, allspice, brown sugar, thyme, soy sauce, lime juice, and oil.

    Pulse the mixture until it forms a thick, slightly chunky paste.

    Place the chicken wings in a large bowl or zip-top bag and pour the jerk marinade over them.

    Massage the marinade into the wings and refrigerate for at least 4 hours, preferably overnight.
