Ingredients

  • 1.5 lbs Boneless skinless chicken thighs, cut into 1-inch pieces
  • 3 tablespoons Jerk seasoning paste
  • 2 tablespoons Olive oil
  • 2 tablespoons Lime juice
  • 1 tablespoon Brown sugar
  • 1 large Red bell pepper, cut into chunks
  • 1 medium Red onion, cut into wedges
  • 1 teaspoon Fresh thyme leaves(optional)
  • 2 pieces Garlic cloves, minced
  • 0.5 teaspoon Salt

Instructions

    In a large bowl, whisk together the jerk seasoning paste, olive oil, lime juice, brown sugar, minced garlic, and salt.

    Add the chicken pieces to the marinade and toss until thoroughly coated; refrigerate for at least 30 minutes.

    If using wooden skewers, soak them in water for 20 minutes to prevent burning on the grill.

    Thread the marinated chicken, red bell pepper chunks, and red onion wedges onto the skewers in an alternating pattern.
