Ingredients
- 2 fillets salmon fillets
- 2 tbsp white miso paste
- 2 tbsp unsalted butter
- 1 tbsp soy sauce (or tamari)
- 1 tbsp mirin (or honey)
- 1 clove garlic(optional)
- 1 tsp fresh ginger(optional)
- 10 oz broccolini
- 1 tbsp neutral oil (for searing)
- 2 tbsp water
- 1 tsp sesame seeds(optional)
- 1 tsp lime juice (optional)(optional)
Instructions
- 1
Prep (10 minutes): Pat salmon dry. If using, mince garlic and grate ginger. In a small bowl, stir together miso, butter, soy sauce, and mirin (and garlic/ginger if using) until smooth.
- 2
Sear (8 minutes): Heat a large skillet over medium-high heat. Add oil. Place salmon skin-side down (or presentation-side down if skinless) and sear until the surface is browned, about 4 minutes.
- 3
Glaze + steam broccolini (10 minutes total cook time): Flip salmon. Reduce heat to medium. Spoon the miso-butter glaze over the salmon. Add broccolini to the pan (trimmed and halved if thick). Pour in water, cover, and cook until salmon is just cooked through and broccolini is bright-tender, about 6–8 minutes. Uncover and simmer 1–2 minutes to thicken the glaze and coat everything.
- 4
Finish (within remaining time): Turn off heat. Sprinkle sesame seeds (and a small squeeze of lime if using). Serve immediately, spooning pan glaze over salmon and broccolini.
