Ingredients

  • 1 lb Chicken wings
  • 2 tbsp Jerk seasoning blend (allspice, thyme, garlic powder, onion powder, cinnamon, nutmeg)
  • 1 small Scotch bonnet pepper
  • 1 tbsp Fresh lime juice
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1

In a large bowl, whisk together the jerk seasoning, minced scotch bonnet (or finely diced if you prefer less heat), lime juice, olive oil, salt, and black pepper to form a paste.

  2. 2

Add the chicken wings to the bowl, toss to coat evenly, and let them marinate at room temperature for 10 minutes while you preheat the smoker to 250°F (120°C).

  3. 3

Place the wings on the smoker rack, ensuring they are not touching, and smoke for 40 minutes, turning once halfway through for even cooking.

  4. 4

Remove the wings, increase the smoker temperature to 375°F (190°C) or finish them on a hot grill for 5‑7 minutes to crisp the skin.

  5. 5

Let the wings rest for 2 minutes, then serve hot with extra lime wedges if desired.
