Ingredients

  • 1 cup young green jackfruit (canned, drained and shredded)
  • 4 pieces corn tortillas (soft)
  • 1/2 cup fresh pineapple, diced
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons cilantro, chopped
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. 1

Heat the olive oil in a skillet over medium heat (2 minutes). Add the shredded jackfruit, smoked paprika, cumin, salt, and pepper; sauté, stirring occasionally, until the jackfruit is lightly browned and heated through, about 5 minutes.

  2. 2

While the jackfruit cooks, combine diced pineapple, red onion, cilantro, and lime juice in a bowl; toss gently to make the salsa (2 minutes).

  3. 3

Warm the corn tortillas in a dry skillet or microwave for about 30 seconds per side.

  4. 4

Assemble the tacos by dividing the sautéed jackfruit among the tortillas and topping each with a generous spoonful of pineapple salsa. Serve immediately.
