Ingredients

  • 1 can Young green jackfruit (canned, in water)
  • 1/2 cup BBQ sauce
  • 4 pieces Mini brioche buns
  • 1 cup Coleslaw mix (shredded cabbage & carrots)
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Apple cider vinegar
  • 1 tablespoon Olive oil
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1

Drain and rinse the jackfruit, then shred it with forks to resemble pulled pork.

  2. 2

Heat olive oil in a skillet over medium heat, add the shredded jackfruit, and sauté for 3 minutes.

  3. 3

Stir in the BBQ sauce, reduce heat to low, and simmer for 20 minutes, stirring occasionally, until the sauce thickens and the jackfruit is tender.

  4. 4

In a small bowl, combine mayonnaise, apple cider vinegar, a pinch of salt, and black pepper to make a quick coleslaw dressing; toss with the coleslaw mix.

  5. 5

Toast the mini brioche buns lightly, then assemble each slider: bottom bun, a generous spoonful of BBQ jackfruit, top with coleslaw, and place the top bun.
