Ingredients

  • 10 oz Italian sausage (mild or sweet), casings removed
  • 15 oz canned white beans (cannellini), drained and rinsed
  • 3 cups chicken or vegetable broth
  • 1 tbsp olive oil(optional)
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 4 cups fresh spinach
  • 0.25 tsp black pepper
  • to taste salt(optional)

Instructions

  1. 1

Prep (10 minutes): Drain and rinse the white beans. Mince the garlic. Rinse and roughly chop the spinach if needed.

  2. 2

Cook (20 minutes): In a pot over medium-high heat, brown the Italian sausage until cooked through, breaking it up as it cooks (about 8 minutes).

  3. 3

Add garlic and oregano and cook for 30–60 seconds until fragrant.

  4. 4

Stir in the white beans and broth. Bring to a simmer and cook until the flavors meld and the soup is heated through (about 12 minutes).

  5. 5

Stir in the spinach and cook until wilted (about 1–2 minutes). Season with black pepper and salt to taste. Serve hot.
