Ingredients

  • 1 cup sushi rice
  • 2 tablespoons rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 nori sheets
  • 4 ounces imitation crab meat
  • 1/2 avocado
  • 1/4 cucumber
  • 2 tablespoons soy sauce(optional)
  • 1 teaspoon wasabi paste(optional)

Instructions

  1. 1

Cook the sushi rice according to package instructions, then transfer to a large bowl.

  2. 2

While the rice is still warm, whisk together rice vinegar, sugar, and salt; gently fold into the rice and let cool to room temperature.

  3. 3

Lay a nori sheet on a bamboo mat, spread half of the seasoned rice evenly over the sheet, leaving a 1‑inch border at the top.

  4. 4

Arrange half of the imitation crab, sliced avocado, and julienned cucumber in a line across the bottom edge of the rice.

  5. 5

Using the mat, roll the sushi tightly, sealing the edge with a little water; repeat with the second sheet and remaining fillings.

  6. 6

With a sharp, wet knife, slice each roll into 6 bite‑size pieces and serve with soy sauce and optional wasabi.
