Honey Garlic Shrimp Stir-Fry

Ingredients
- 1 pound Large shrimp, peeled and deveined
- 0.33 cup Honey
- 0.25 cup Soy sauce
- 3 cloves Garlic, minced
- 1 teaspoon Fresh ginger, grated
- 2 cups Broccoli florets
- 2 tablespoons Olive oil
- 2 stalks Green onions, sliced(optional)

In a small bowl, whisk together the honey, soy sauce, minced garlic, and grated ginger to create the marinade.

Place the shrimp in a shallow bowl or sealable bag and pour half of the marinade over them. Let marinate for 15 minutes.

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the broccoli and stir-fry for 3-4 minutes until tender-crisp. Remove broccoli from the pan.

Add the remaining tablespoon of oil to the pan. Add the shrimp (discarding the used marinade) and cook for 2 minutes per side until pink and opaque.

Pour the reserved half of the fresh marinade into the pan with the shrimp. Add the broccoli back in.

Toss everything together for 1-2 minutes until the sauce thickens and coats the shrimp and vegetables.

Garnish with sliced green onions and serve over rice or noodles.
