- 3 tbsp White miso paste
- 2 tbsp Cornstarch
- 1 large Egg white
- 1 whole lemon Lemon juice and zest
- 1 whole lime Lime juice and zest
- 2 tbsp Honey
- 1 tbsp Ginger, minced
- 3 cloves Garlic, minced
- 3 tbsp Vegetable oil
- 1 tbsp Soy sauce
- 2 stalks Green onions, sliced(optional)

In a medium bowl, whisk the egg white and cornstarch together until smooth.

Toss the sliced chicken in the egg white mixture to coat thoroughly; let sit for 15 minutes to 'velvet' the meat.

In a small bowl, whisk together the miso paste, honey, soy sauce, lemon juice, and lime juice until smooth.

Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat until shimmering.

Add the chicken in a single layer and sear until golden and just cooked through, then remove chicken from the pan.

Add the remaining oil, garlic, and ginger to the pan, sautéing for 30 seconds until fragrant.

Pour in the miso-citrus sauce and bring to a simmer until it begins to bubble and thicken into a sticky glaze.
