Ingredients

  • 3 cups Old-fashioned rolled oats
  • 1 cup Raw almonds, chopped
  • 0.5 cup Sunflower seeds
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Sea salt
  • 0.5 cup Honey
  • 0.33 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 0.5 cup Dried cranberries(optional)
  • 0.25 cup Shredded coconut(optional)

    Preheat your oven to 300°F (150°C) and line a large rimmed baking sheet with parchment paper.

    In a large mixing bowl, combine the oats, chopped almonds, sunflower seeds, cinnamon, and salt.

    In a separate small bowl, whisk together the honey, melted coconut oil, and vanilla extract until smooth.

    Pour the liquid honey mixture over the dry ingredients and stir well until every oat is thoroughly coated.

    Spread the mixture evenly onto the prepared baking sheet, pressing it down slightly with a spatula to encourage clusters.

    Bake for 20-25 minutes, stirring halfway through, until the granola is fragrant and turns a light golden brown.

    Remove from the oven and let it cool completely on the pan without stirring; this allows the granola to crisp up and form chunks.

    Once fully cooled, stir in the dried cranberries and shredded coconut if using, then store in an airtight container.
