Halloumi and Roasted Veggie Skewers

Ingredients

  • 250 g Halloumi cheese
  • 1 large Red bell pepper
  • 1 medium Zucchini
  • 1 small Red onion
  • 2 tbsp Olive oil
  • 1 tsp Dried oregano
  • 1 tbsp Lemon juice
  • 0.5 tsp Black pepper(optional)

Instructions

    Soak wooden skewers in water for 10 minutes to prevent burning.

    Cut the halloumi, bell pepper, zucchini, and red onion into 1-inch (2.5cm) chunks.

    In a small bowl, whisk together the olive oil, dried oregano, lemon juice, and black pepper.

    Thread the cheese and vegetables onto the skewers, alternating colors and textures.

    Brush the skewers generously with the prepared herb oil.

    Preheat a grill pan or outdoor grill to medium-high heat.

    Grill the skewers for 3-4 minutes per side, turning occasionally, until the halloumi is golden brown and the vegetables are tender-crisp with light char marks.
