Halloumi and Roasted Vegetable Skewers

Grilled skewers of salty halloumi cheese, zucchini, and cherry tomatoes drizzled with a lemon-herb vinaigrette.

Ingredients

  • 250 g Halloumi cheese
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 medium Zucchini
  • 1 medium Red onion
  • 3 tbsp Olive oil
  • 1 tsp Dried oregano
  • 1 tbsp Lemon juice
  • 0.5 tsp Garlic powder

    Soak wooden skewers in water for 20 minutes to prevent burning.

    Cut the halloumi, bell peppers, zucchini, and red onion into 1-inch (2.5cm) chunks.

    In a small bowl, whisk together the olive oil, dried oregano, lemon juice, and garlic powder.

    Thread the cheese and vegetables onto the skewers, alternating colors and textures.

    Brush the skewers generously with the prepared herb oil.

    Preheat a grill pan or oven to 400°F (200°C).

    Cook the skewers for 12-15 minutes, turning halfway through, until the vegetables are tender and the halloumi is golden brown.
