Halloumi and Roasted Pepper Salad

Warm salty halloumi cheese paired with charred peppers and a balsamic glaze over mixed greens.

Ingredients

  • 250 g Halloumi cheese
  • 2 large Red bell peppers
  • 100 g Mixed salad greens
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 tsp Dried oregano
  • 10 pieces Cherry tomatoes(optional)
  • 1 pinch Black pepper

Instructions

    Preheat your oven to 200°C (400°F). Slice the bell peppers into thick strips, toss with a little olive oil, and roast for 15 minutes until softened and slightly charred.

    Slice the halloumi into 1cm thick rectangles.

    Heat a non-stick frying pan over medium-high heat. Sear the halloumi slices for 2 minutes on each side until golden brown and crispy.

    In a small bowl, whisk together the olive oil, lemon juice, dried oregano, and black pepper to create the dressing.

    Arrange the mixed greens on plates, top with the roasted peppers and warm halloumi slices.

    Drizzle the dressing over the salad and serve immediately.
