  • 1 1/2 lbs Boneless skinless chicken breasts
  • 1/4 cup Fresh lime juice
  • 1/2 cup Fresh cilantro, chopped
  • 3 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 3 whole Bell peppers, assorted colors sliced
  • 1 whole Large white onion, sliced
  • 8 units Flour tortillas
  • 1 teaspoon Salt and black pepper

Instructions

    In a large bowl, whisk together lime juice, cilantro, 2 tablespoons of olive oil, garlic, cumin, salt, and pepper.

    Add the chicken breasts to the marinade and refrigerate for at least 30 minutes, or up to 4 hours.

    Preheat your grill to medium-high heat and lightly oil the grates.

    Toss the sliced peppers and onions with the remaining tablespoon of olive oil.

    Grill the chicken for 6-8 minutes per side until the internal temperature reaches 165°F (74°C).
