Ingredients

  • 1.5 lbs Pork tenderloin, cut into 1-inch cubes
  • 0.25 cup Extra virgin olive oil
  • 1 tablespoon Dried oregano
  • 2 tablespoons Lemon juice
  • 3 cloves Garlic cloves, minced
  • 4 pieces Greek pita breads
  • 1 cup Tzatziki sauce
  • 0.5 cup Red onion, thinly sliced
  • 1 cup Cherry tomatoes, halved
  • 0.5 cup Cucumber, sliced
  • 2 tablespoons Fresh parsley, chopped(optional)

    In a large bowl, whisk together the olive oil, lemon juice, minced garlic, and dried oregano.

    Add the pork cubes to the marinade, toss to coat thoroughly, and refrigerate for at least 30 minutes.

    Thread the marinated pork onto wooden or metal skewers, leaving a small space between each piece.

    Preheat a grill or griddle pan over medium-high heat and lightly oil the surface.

    Grill the skewers for 8-10 minutes, turning occasionally, until the pork is charred and cooked through.

    While the meat rests, lightly toast the pita breads on the grill until soft and warm.

    Spread a generous tablespoon of tzatziki onto each pita, then slide the meat off the skewers onto the bread.
