Ingredients

  • 1/2 cup orzo (dry)
  • 1/2 cup chicken breast (cooked, shredded or diced)
  • 2 cups chicken broth
  • 2 cloves garlic (minced)
  • 1 tbsp lemon (zest)
  • 2 tbsp lemon juice
  • 1/4 cup feta cheese (crumbled)
  • 1 tbsp olive oil
  • 1/4 tsp salt(optional)
  • 1/8 tsp black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Shred or dice the cooked chicken. Zest and juice the lemon. Mince the garlic.

  2. 2

In a small pot, heat the olive oil over medium heat. Add the garlic and cook for about 30 seconds until fragrant.

  3. 3

Add the chicken broth and bring to a simmer. Stir in the orzo and cook, stirring occasionally, until tender, about 10–12 minutes.

  4. 4

Stir in the lemon zest, lemon juice, and cooked chicken. Simmer 2–3 minutes to warm the chicken through.

  5. 5

Turn off the heat and fold in the feta. Taste and adjust with salt and black pepper if needed. Serve immediately.
