Ingredients

  • 2 tbsp Olive oil
  • 1 15-oz can Cooked white beans (canned, drained and rinsed)
  • 1/2 cup Long-grain white rice (uncooked)
  • 1 cup Water (for rice)
  • 2 tbsp Lemon juice
  • 1 tsp Lemon zest
  • 1 tsp Dried oregano
  • 2 cloves Garlic (minced)
  • 1/4 tsp Salt(optional)
  • 1/4 tsp Black pepper(optional)

Instructions

  1. 1

Cook the rice: Rinse the rice, then combine rice and water in a small pot. Bring to a boil, reduce to low, cover, and simmer until tender, about 15 minutes. Turn off heat and let sit covered for 5 minutes.

  2. 2

Warm the beans: While the rice cooks, heat olive oil in a skillet over medium heat. Add garlic and cook for about 30 seconds until fragrant.

  3. 3

Season and simmer: Add drained/rinsed white beans, oregano, lemon juice, lemon zest, and salt and pepper (if using). Simmer for about 10 minutes, stirring occasionally, until warmed through and lightly saucy.

  4. 4

Serve: Fluff the rice and divide between bowls. Spoon the lemon-oregano beans over the rice and drizzle any remaining skillet juices on top.
