Ingredients

  • 1 lb Chicken breast
  • 10 oz Baby potatoes
  • 1 large Lemon (juice and zest)
  • 3 cloves Garlic
  • 2 tsp Dried oregano
  • 2 tbsp Olive oil
  • 3/4 tsp Salt
  • 1/2 tsp Black pepper
  • 1/3 cup Chicken broth (low-sodium)

Instructions

  1. 1

Prep (15 minutes): Heat oven to 425°F (220°C). Halve the baby potatoes. Pat chicken dry and cut any thick areas to even thickness.

  2. 2

Marinate: In a bowl, mix lemon juice and zest, minced garlic, oregano, olive oil, salt, and black pepper. Toss potatoes with half the marinade. Rub remaining marinade over chicken.

  3. 3

Roast (35 minutes total cook time): Place potatoes on a sheet pan and roast for 15 minutes. Add chicken to the pan (nestle it among potatoes) and roast until chicken is cooked through and potatoes are tender, about 20 minutes more.

  4. 4

Pan sauce: Transfer chicken and potatoes to a plate. Carefully pour off excess fat if needed, then add chicken broth to the hot pan. Scrape up browned bits and simmer 2–3 minutes until slightly reduced. Spoon sauce over chicken and potatoes.
