  • 1 tbsp olive oil
  • 1 small lemon
  • 2 cloves garlic
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 300 g baby potatoes
  • 1 cup green beans
  • 1/2 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. 1

Preheat oven to 425°F (220°C). Cut potatoes into bite-size pieces.

  2. 2

Toss potatoes with 1/2 tbsp olive oil, salt, pepper, and paprika. Roast 20–25 minutes until tender and browned.

Add a splash of water to skillet, then squeeze in lemon juice. Spoon pan juices over pork.

  5. 5

Steam or sauté green beans until crisp-tender, 6–8 minutes.

  6. 6

Serve pork with roasted potatoes and green beans.
