Ingredients

  • 160 g Pasta (small shells or rotini)
  • 1 medium Cucumber
  • 150 g Cherry tomatoes
  • 80 g Feta cheese
  • 1/4 small Red onion
  • 2 tbsp Fresh dill
  • 1/2 cup Plain Greek yogurt
  • 2 tbsp Lemon juice
  • 1 tbsp Olive oil
  • 1 clove Garlic(optional)
  • 1/4 tsp Salt(optional)
  • 1/8 tsp Black pepper(optional)

Instructions

  1. 1

Bring a pot of salted water to a boil and cook the pasta according to package directions until al dente, about 10 minutes. Drain and rinse briefly under cool water to cool it quickly.

  2. 2

While the pasta cooks, dice the cucumber, halve the cherry tomatoes, finely dice the red onion, and chop the dill.

  3. 3

In a large bowl, whisk together the Greek yogurt, lemon juice, olive oil, and (if using) minced garlic. Season with salt and black pepper.

  4. 4

Add the cooled pasta, cucumber, tomatoes, red onion, and dill to the bowl. Crumble in the feta and gently toss until evenly coated.

  5. 5

Taste and adjust seasoning, then serve immediately or chill for up to 1 hour.
